I discovered today, much to my surprise and delight, that there is actually something even better than The BEST Zucchini Bread recipe. (gasp) I know, it seems impossible. What could possibly top that moist and spicy, citrus-zinged quick bread? The only answer is…Orange Cream Cheese Icing! It came to me in a dream, or at least it was on my mind as soon as I awoke. This creamy orange spread is the “icing on the cake.” It’s also delicious on pumpkin bread. (I checked…just so I could report its versatility.)
ORANGE CREAM CHEESE SPREAD
1 cube butter, softened (I used Smart Balance)
4 oz. cream cheese, softened (I used Neufchatel)
3 1/2 cups powdered sugar
1 tsp. vanilla extract (or 3/4 tsp. powdered vanilla)
1 tsp. grated orange peel
2 Tbsp. orange juice
2 Tbsp. milk
Cream butter and cream cheese together. Blend in remaining ingredients.

No way! I just discovered a similar thing myself. I made this dip http://www.raleys.com/www/apps/recipes/recipe.jsp?recipeid=1182200 and had some left over and had my zucchini bread, so I married the two. Mmm.
