Comfort Food from Food Storage

Having a supply of food in your cupboards is possibly the best definition of “comfort food.”  It is a blessing to have the food that we need.  As our temperatures finally begin to cool, I am craving those savory down-home recipes of the season.  This recipe is easy family fare and is a great way to put your potato pearls or flakes and canned vegetables to good use. 

HAMBURGER PIE

1 onion, chopped

1 can whole kernel corn

1 c. grated cheese

1 lb. ground beef

1 c. green beans

1 can tomato soup

5 c. mashed potatoes

Cook onion and ground beef until brown.  Add drained beans, corn and soup.  Pour into greased 2 quart casserole dish.  Scoop mashed potatoes with ice cream scoop and place over the meat mixture.  Top the potatoes with the grated cheese.  Bake at 350 degrees for 30 minutes.
