Soup Mix

Soup mixes can be a fun and practical gift for neighbors and friends.  They’re simple to assemble and handy to have on hand for your own family as well.  Here are two of my favorites.  I have pre-made tags to fit over the cello bags for the Turkey Noodle Soup recipe.  E-mail me at kim@allaboutfoodstorage.com if you would like a copy.  It is a Microsoft Publisher document.

 TURKEY NOODLE SOUP MIX

 1 cup dry medium egg noodles
1 tablespoon dried minced onion
1 1/2 tablespoons sodium-free chicken bouillon granules
1/4 teaspoon black pepper
1/8 teaspoon celery seeds
1/4 teaspoon dried thyme
1/8 teaspoon garlic powder
1/2 teaspoon salt
1 bay leaf

 Place all ingredients in a container or cello bag for gift giving. If using bags, store in an airtight container.

Preparation time: 5 minutes
Yield: Mix for 1 pot of soup

Instructions to write on gift tag:
Holiday Turkey Noodle Soup
1 package Turkey Noodle Soup Mix
2 stalks celery, finely diced (about 1/2 cup)
3/4 cup chopped carrot
8 cups water
2 cups cooked, diced turkey breast (cooked chicken breast may be substituted)

In a large pan, combine 1 package Soup Mix, celery, carrot, and water; stir to mix. Bring to a boil over high heat, reduce to medium heat, and simmer for 15 minutes. Discard the bay leaf. Stir in turkey and simmer an additional 5 minutes.

Yield: 10 cups  Serving Size: 1 cup

CREAMY POTATO SOUP MIX

1/4 cup chicken bouillon granules
3 cups instant mashed potato flakes, packed
2 tablespoons dried, minced onion
3 tablespoons dried chives
1 teaspoon white pepper
1/4 cup bacon bits
1 tablespoon dried parsley
1/2 tablespoon dill weed
1/2 teaspoon dried thyme
1 cup powdered milk
1/4 teaspoon paprika

Directions:  Combine ingredients; mix well. Spoon into a plastic zipping bag or wide mouth quart jar. Attach instructions.
Instructions for making 1 serving of soup: Place 1/2 cup mix into a soup bowl. Add one cup boiling water. Stir until smooth and creamy.

CALIFORNIA CORN BREAD MIX

This is a sweet, cake-like cornbread that is delicious with honey butter.

 2 cups Bisquick baking mix
1/2 cup cornmeal
1/2 cup granulated sugar

1 T. baking powder

 
In a large glass bowl, stir all the ingredients together. Store in an airtight container/jar.  Attach directions:

California Corn Bread:
1 jar California Corn Bread Mix
2 eggs
1 cup milk
1/2 cup butter, melted
Heat the oven to 350 degrees F. Place the cornbread mix in a large mixing bowl and add the eggs, milk and butter. Blend until the mixture is smooth. Pour into a greased 8-inch square baking pan and bake for 30 minutes.
