I tried this last night for dinner (yes, I'm the queen of making "breakfast" for dinner) and used real/fresh apples. I think I needed to brown them a little longer to soften them up more - they were a bit on the crunchy side. I think next time I'll try it w/ dried or dehydrated apples or saute longer. :)

I'm sure you could make it with dried apples. Hmm...not sure if you should rehydrate them...maybe a little bit (then squeeze out as much water as possible). Yes, your spice combo will work fine.

Can I make this with just dried apples (the ones that aren't crsp, but soft and chewy)? If so, do I rehydrate them? And if I don't have apple pie spice, is it just 1/8 tsp. of each of cinnamon, ginger, nutmeg and cloves?

Mmm! Of course I'll love it! I can't wait to try it! We make German pancakes a couple of times a month already, so this will be something fun to try!
